Chamomile isn't tea in the strict sense — there's no camellia sinensis in it. It's an infusion of dried flower heads from the German chamomile plant, a small daisy-like bloom with a yellow centre and white petals.
Most supermarket chamomile is ground to a fine powder so it fits a bag, which flattens the flavour and pushes it towards bitterness. We keep the heads whole. In the cup that reads as a rounder, sweeter brew with a clear apple note — chamomile's name traces back to the Greek for “earth apple” for exactly that reason.
One heaped teaspoon per cup. Water just off the boil, around 95°C, steeped five to seven minutes. Cover the cup while it sits to keep the aroma in.
Two teaspoons per cup of water, steeped ten minutes, then cooled and poured over ice. A slice of lemon sharpens the honeyed edge nicely.
Because there's no leaf tannin, chamomile won't turn harsh if you forget about it for a few minutes. Leave it longer for a deeper, more golden cup.
Chamomile is a slow-hours cup. It shows up at the end of the working day, on a quiet Sunday afternoon, and as the last pour before the lights go off — a wind-down ritual rather than a morning one, and caffeine free so the time of day never matters.
