Whole botanicals, brewed slowly

Herbal tea isn't tea in the strict sense — there's no camellia sinensis in the pouch. It's an infusion: flowers, roots, fruits, bark and leaves steeped in hot water. Because there's no leaf tannin, herbals take a hotter pour and a longer steep than green or white tea, and they won't turn bitter if you forget about them for a minute.

We use whole pieces rather than ground powder, so you can see exactly what's in the cup — petals, root slices, whole berries. Good hot, and just as good chilled over ice on a warm afternoon.
